V Smiley Preserves is tiny-batch, honey-sweetened jams, marmalade, and conserves handmade in Bristol Vermont. We call it jam fruit, and you'll want to eat it right out of the jar.
Founder V Smiley started V Smiley Preserves in Seattle while working as a line cook. She knew someday that she’d return home to Vermont, home to the farmhouse where she was born, home to the 150 acres of farmland, pasture and forest located along the New Haven River. The honey VSP uses comes from up the road. Amy, V's partner, grows the aromatics, and year by year, Amy and V's mother Susan plant and harvest more fruit from this family land.
Why honey? We make jam with honey because of the taste. Honey is under-represented in preserves. In cookbooks, we read that honey disrupts jam’s clarity of flavor or that honey is a flavor usable like a spice. Here’s the thing. Sugar has a taste too, but it’s a taste we’re so used to that we don’t notice its flavor anymore. Honey is a powerful preservative and sweetener that comes from nearby and is intrinsically linked to the fruit-growing process. It's also a pollinator the honeybee provides everything we need to make fruit preserves.
